Effects of saline-alkali water on the nutritional quality of Bo fang“Xianfeng No.2”

Effects of saline-alkali water on the nutritional quality of Bo fang“Xianfeng No.2”

Abstract

Objectives The effects of salinity and alkalinity in water on the nutrient quality of muscle in Bo fang "Xianfeng No.2" were studied to provide the scientific basis for farming freshwater fish in saline-alkali water. Methods Bo fang "Xianfeng No.2" were temporarily fed in saline-alkali water (5‰ NaCl, 1‰ NaHCO3) for 0 days (as the control group), 8 days, 16 days, and 30 days (as the experimental group). The content and composition of conventional nutrients, amino acid and fatty acid, and the characteristics of muscle texture in muscles of Bo fang "Xianfeng No.2" were measured. Results The content of protein and fat in fish meat in the experimental group was significantly higher than that in the control group (P<0.05). The total amount of amino acids, essential amino acids, and non-essential amino acids in muscles had a trend of first increasing and then decreasing with the extension of time for temporary feeding, reaching the highest value at 16 days. Among the 19 fatty acids detected, the content of 16 fatty acids significantly increased with the prolongation of time for temporary feeding (P<0.05). The hardness and elasticity of muscle in 30 days of temporary feeding in saline-alkali water were significantly higher than those in the control group (P<0.05), and the recovery at 8 days was significantly higher than that in the control group (P<0.05). Conclusions Bo fang "Xianfeng No. 2" adapted to saline-alkali environment, and saline-alkali water effectively improved the nutritional quality and texture of muscle, making it highly edible and economically valuable. It is recommended to feed Bo fang "Xianfeng No. 2" temporarily in saline-alkali water for 16 days based on the results of the current study and the actual situation of aquaculture.
